Ingredients
  • 8 medium tomatoes
  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 5 shallots (if you don't have shallots, you can use 1 medium-sided onion instead).
 
Preparation

Cut the tomatoes into thick slices (about quarter of an inch thick, which is just a bit under a centimeter). Remove the cores from the slices.

Arrange the slices on a serving plate.

Cut the shallots into pieces. For an authentic recipe, they should be coarsely cut, but many people prefer finely cut. Sprinkle the shallots over the tomato slices.

Mix the vinegar and olive oil together and then pour over the tomatoes.

Put the serving plate on the table with a pair of spoons,  so guests can help themselves.

 
Additional Notes
On it's own, this salad is a starter. However, one could serve it with sliced bread (a French bagette is best) to make a light meal on its own. In this case, simply slice the bread and put it into a basket or bowl in the centre of the table, where people can help themselves. If the meal isn't too posh, it is a pleasure to mop up the salad dressing with the bread.

This is a very simple dish, but quite enjoyable, especially on a hot summer day. Its very simplicity means that the quality of the raw ingredients comes out (for good or bad), so particular attention should be given to getting fresh, ripe tomatoes and a high quality olive oil.
