About a pound of pork meat (a front leg is ideal), should be raw, salted and slightly smoked
1kg pounds dried lentils
5 medium potatoes
5 carrots
Slice of pork belly (about 2cm thick)
3 or 4 saussages (preferably smoked and coarse)
About a pound of pork meat (a front leg is ideal), should be raw, salted and slightly smoked
Preparation
Put the lentils in a large pot with at least double the amount of water and soak for 4 hours. Make sure that as the lentils absorb water that they are always covered in water. After 4 to 6 hours, put the lentils in a sieve to drain off the water and then rinse thoroughly under cold water.
Put the lentils and meat into a large pot
Peel the potatoes and carrots, then cut them into pieces about a centimeter large. Add to the pot.
Cover with water and then boil until the potatoes and carrots are soft (about 20 minutes).
The soup is ready to serve
Note: Some people prefer to add vinegar (80 ml or a third of a cup) to the pot before boiling.
