10 ounces ham slices (this ingredient can be omitted, to make a vegetarian version)
1 cups soured cream
1 lemon
2 cups chives
salt
12 medium-sized potatoes
200g cheese
300g ham slices (this ingredient can be omitted, to make a vegetarian version)
250ml soured cream
1 lemon
500ml chives
salt
Preparation
Potatoes
Wash the dirt off the potates (use a dish scrubbing pad if it helps)
With a knive or fork, poke holes on all sides of the potatoes (be carefull not to cut or poke yourself). This step is neccessary to allow the steam to escape when baking, otherwise some of the potatoes may burst apart.
Put the potatoes in an oven pre-heated to 250°C (or 480°F) for one hour
Add-ons
Grate the cheese and put in a serving bowl
Cut the ham into small pieces (about a centimeter square) and put in a serving bowl
Finely cut the chive and put into a bowl. They should not be much longer than they are wide (coarsely cut chives do not taste). Squeeze the juice from the lemon and add the juice to the chives. Add the soured cream and a generous amount of salt. Taste, adding more salt if required. Place the final mixture in a serving bowl
Serving
When the potatoes are cooked, put them in a serving dish and place on the table with the other serving bowls (cheese, ham and chive sauce).
Guests should take a potato, cut it into pieces (with the skin) and add the other ingredients on top.
Eat and enjoy

A simple but filling recipe based on potatoes, makes a meal in itself.
